Morning Glory Muffins

My sister needed a cupcake-like recipe for my nephew Thad to take to school. So she came to us, because we have the best food ever!!

These muffins are so good that kidlets will never know they are good for them.

Morning Glory Muffins

1 1/2 c. flour
3/4 t baking soda
3/4 t. cinnamon
1/2 t. salt
1 1/4 c. sugar
1/2 t. vanilla
3/4c. oil
3 eggs
1 large carrot (grated)
1 zucchini (grated)
1 c. coconut
1/4 c. golden raisins
1(8 1/2 oz.) can crushed pineapple (drained, reserve juice)

Sift together first four ingredients and set aside. In separate bowl, mix sugar, vanilla, oil, and eggs, stirring wall. Add dry ingredients to Liquid mixture, mixing quickly. Fold in veggies and fruits. If batter is too dry add a small amount of reserved juice. Grease muffin tins, spray with Pam, or use paper liners, and fill 3/4 full.

Bake at 375 degrees about 25 minutes or until golden brown
